Here's another idea: maybe you sense urgency
based not only on how full your bladder is, but
also based on how *fast* it is filling up.
So during the first few drinks, your body
is still trying to establish just how much
fluid is coming in, and how much should be
going out. In engineering terms it is
"undershooting" the right output rate.
But then eventually it catches up, and your
kidneys turn on full - and then the bladder,
which might accept being pretty full in a
steady state kind of way, realizes it is
filling really fast, and rings the alarm
quicker than it might ordinarilly.
