This subject has puzzled me too. A few years back I watched a "Tour de France" highlights programme on the French satellite tv channel TV5. One short feature item dealt with cyclists peeing (I don't speak French, so have no idea what was being said). At the end of it they showed a brief clip of a female cyclist squatting in some bushes at the side of the road, smiling up at the camera.
Whether a leading contender for a race title would take a minute out to do this I don't know.
