From a Daddy-type to "some Daddy",
First of all, welcome to posting here at Bethan's board, and thanks for sharing your experiences and situation.
I must admit I tend to enjoy similar recitations during lovemaking in regards to adult babyhood, diaper dependence, and such. I prefer a "call and response" sort of thing, where statements to such are met with confirmation. My point in sharing my own tendency towards response is mostly that I can very much relate to her sentiments, and as such, may have an idea or two to provide fodder for the intimate chatter that enables her response.
One thing that I've done and enjoyed has been public diaperings (i.e. putting her "back in diapers" from big girl panties) at more "broadly kinky" (i.e. BDSM) play parties held in private homes and such. Being able to truly expose the babyhood of your partner in a (more or less) accepting social circumstance can be great fun. Naturally, comfort levels between ageplayers and broader kink do very, but if you find yourself able to befriend such people and get invited to such events, it might be a powerful opportunity to reinforce your little one's status.
Another thing, that is arguably a little more for the brave at heart has been diaper changes in the backseat of a dark parking lot. I've done this two or three times, and it can be nerve-wracking but quite fulfilling.
One thing I have not yet done but would like to is a diaper change in a private, locking, disabled restroom. I have spoken with some others that have done this without adverse event, but have yet to find myself in with a partner in such a need while shopping.
My general impression is that all three of these activities are reasonably low-risk and of potentially great power in giving her the sorts of feelings that she has admitted to enjoy having described to her during "pillow talk".

P.S.- Another quick thought might be the nigh-cliche ordering from the children's menu, and yet another might be diaper-shopping as a couple.
