There's a different style of ageplay for every ageplayer.
The idealized fantasy role in my head is for the woman to be playing at the pre-verbal crawling da-da-goo-goo stage but I accept that the evolution of a relationship between two real adults would be highly unlikely to see her live that life completely,and I have no way of knowing if,as we tried approaching it,which of us would wind up being the one who didn't want to go any further!
I don't agree that the roleplay fun is based on her trying to "grow up",since her role-ness is the extent to which she can "grow down".But what turns out to be fun is whatever a given couple both enjoy.
