Well, I imagine that you know best what you want out of the daddy parts of the relationship, so could you just guide him? If directly telling him what you want is awkward or doesn't work for you, you could write a "manual" yourself, perhaps online or perhaps on paper, and have him read it.
Or are you just plain looking for ideas?
