You're entitled to your opinion, but I think you deliver it a little harshly. No need to say what you or others think is "gross."
Those who enjoy "mutilating" their bodies as you labeled it, don't generally call it as such; they call it "body modification." So to rephrase your question, why would someone want to modify his or her body? For many of the same reasons why some people like diapers:
1. Makes them feel good/happy/sexy
2. The modification (ink, piercing, cutting, etc.) represents who they really are, much the same way an AB girl might feel that wearing a diaper represents who she really is
3. Sometimes doing the modification is in itself erotic or arousing, like a woman unbaring (perhaps submitting) herself before a tattoo artist who will "brand" her. Just as for some people, the diaper change is erotic, arousing, or can be an act of Dominance and submission.
Another thing is that body modification may be a "fad" to you, but to many who enjoy it, its as "hardwired" to them as ABism is to your girlfriend.
Personally, I don't think body modifications have any impact on a person's ABism. In fact, I'm sure there are some Daddies who *love* it. Unique differences -- not similarities -- are what make sexuality interesting. And thank goodness we don't all like the same things, the same kinks, the same body types and shapes and styles, because otherwise sex, sensuality, erotica (or whatever you call it for you) would be a total bore.
So in contrast to your opinion, I don't think "Daddys princess" needs to define her body art based on your outline. She should be herself, and define herself as she likes.
