This is similar to our preferred method of play.
The mattress itself has a waterproof mattress cover. On top of that, we have a washable, polyester mattress protector and then normal sheets and bedding.
Upon urination, the mattress protector beneath the sheet soaks up pee. You get wet, but it doesn't pool as it would on a plastic sheet.
The wet bed can be dealt with simply by throwing the bedding and mattress protector into the wash before wiping down the waterproof (well, pee-proof) cover that remains on the mattress.
