You could go for a stroll along Southbank, visit the museum, stop at a cafe somewhere in the CBD, catch a movie, go on the ferris wheel near fed square, spend some time shopping etc.
Just a few ideas anyway (there is plenty to see and do in Melbourne, have a look at http://www.onlymelbourne.com.au/ for a few more, I find it pretty handy).
